Portabella with Port
The sweet, rich taste of port with walnuts and Stilton cheese is a classic combination. This recipe is nod to it, but you don't need the port to enjoy it. As an hors d'oeuvre by itself, it is quick and easy. Any good blue cheese can be used.

Ingredients:
* 1 6-ounce package Phillips Portabella caps
* Vegetable oil
* 1⁄2 cup coarsely chopped walnuts
* 4 ounces blue cheese, crumpled (1 cup)

Preparation:

Preheat the oven to 350°F.

Wipe the caps clean and brush them with a little oil. Place in the oven on an oven rack and heat for 3 minutes. Remove from the oven and evenly fill the caps with the walnuts and then the cheese. Return to the oven until the cheese is melted, about 2 minutes.

Serve as an appetizer with knives and forks, or cut into quarters and pass as a hors d'oeuvre to be picked up by hand.
