Farbood's Fabulous Barbecued Oysters

This dish is deceptively simple and it is hard to imagine that something so simple can taste so good. However, the oyster mushroom is indeed transformed when prepared in this manner, crisp and crunchy on the outside yet tender on the inside. The key is to use metal skewers so that the oyster mushroom gets cooked properly. This is the recipe to try on your friends that claim to not like mushrooms. To this day we have yet to find anyone that did not like these oyster mushrooms and this recipe.

Ingredients:
1/2 cup olive oil
1 lb. of Phillip's Mushroom Farms oyster mushrooms
Salt to taste

Preparation:
Line oyster mushrooms on a flat surface alternating the caps and stems. Skewer the oyster mushrooms on metal skewers. Brush the mushrooms with olive oil. On a very hot grill over real charcoal barbecue the oyster mushrooms until the edges and gills are golden brown, almost charred but not quite charred. Salt to taste. Serve immediately, watch them disappear and be prepared to make more!
